BEST!! Raw Walnut Banana Bread



OMG I made the BEST Raw Banana Nut Bread!!!!!! It's incredible!!!!
NOTE to self.. remember to take pix!!!

This is the recipe:
Raw Walnut Banana Bread
2C cups raw almonds Soaked 24 hours
1 1/2 cup raw walnuts Soaked overnight , divided
1/2 cup oat groats sprouted and rinced well (got these from sprout people and they are so good just soaked overnight!)
1/3C co flour (used actual CO flour so not 100% raw)
2T maple syrup
3/4 tsp ground cinnamon
pinch nutmeg
1 lemon juiced plus the grated zest
1T vanilla bean (used a small pour of my good vanilla)
1/3C ground flax
Half teaspoon of fine sea salt
12 dated divided (6+6 medjool dates chopped (set aside 1/3C)
2.5 medium bananas, very ripe
In a food processor fitted with the S blade, blend the almonds, 1 cup of the walnut pieces, and oat groats. Add CO flour and ground flax.. blend a second.. add half lemon juice and all spices. Add the dates and bananas; blend until the mixture forms a dough. Remove the S blade from the mixing bowl and place in bowl and stir in the remaining 1/2 cup of walnut pieces and 1/3C chopped dates with a wooden spoon... add more lemon juice as needed to make very thick batter.
Put batter in a gallon ziploc and pat down to about 1 inch thick and chill overnight..
Cut into logs and put in dehydrator overnight.. turn over and dehydrate several more hours..

Raw Breakfast Crackers Recipe

I wanted to come up with a dehydrated cracker that I could have with my Raw Waldorf salad... I find that as I am transitioning to more and more raw, that having dehydrated, more dense food really helps on occasion for sure (still eating cooked vegan on many nights) but I have made salads (I LOVE a good salad and enjoy coming up with meals that are amazing salads) several nights and this past weekend both days we were 100% Raw.

So I wanted a cracker that was not savory.  I like mixing fruit and greens for lunch occasionally and don't want a savory cracker for those.

I made Raw Breakfast Dried Fruit and Sunflower Seed Crackers:


1 heaping Tablespoon Raw cacao
2 oranges I zested the peel and then peeled oranges and chopped them
6 huge, juicy amazing Medjool dates (they were like the size of 2 normal dates!
1 C Sunflower seeds soaked 4 hours
1/2 C Flax seed soaked 4 hours
3/4 C Pumpkin seed soaked overnight
Half teaspoon sea salt
1/2 C Dried mango cheeks from TheLivingTreeCommuity (these are absolutely incredible!!) chopped
1/2 C Dried peaches from TheLivingTreeCommunity (also just amazing) chopped

I set aside the dried mango and peaches and half of the sunflower and pumpkin seeds, threw everything else in the food processor and blended.. it was fairly watery.. I was afraid I might need to add more flax but after I added in the chopped fruit and rest of the seeds and stirred it up.. it was ok to spoon onto my teflex in small 3 inch rounds approx.

I dehydrated 24 hours and then turned over onto the grate mats and dehydrated another 24 hours
